Merguez Chipolatas

A Hackney take on a North African classic, the merguez sausage has travelled from Morocco and Algeria through France and across the Channel to reach our shores and our tables. Dazzlingly red, they get their colour from smoky, spicy harissa paste which when combined with the richness of lamb mince and the freshness of coriander culminates in a remarkably satisfying sausage.
